Try These! They Are Delicious!

If you are a bread lover, then you need to try these rolls. They are DELICIOUS!
I made them for our Thanksgiving dinner. They were super simple to make and very good.
There is no kneading involved and you will be enjoying these in no time! I brought the leftover rolls home and ate every-single-one! Ate them plain, ate them with leftover turkey and ate them with butter and jam. Mmmmm. I think I'll whip up a batch tomorrow.
Anyway, here is the recipe--

30 Minute Rolls
1 cup plus 2 Tbsp warm water
1/3 cup oil
2 Tbsp yeast
1/4 cup sugar
1/2 tsp salt
1 egg
3 1/2 cup flour
Heat oven to 400 degrees.
In your mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes. Using your dough hook, mix in the salt, egg and flour. Knead with hook until well incorporated and dough is soft and smooth. (Just a few minutes).
Form dough into 12 balls and then place in a greased 9x13 pan and allow to rest for 10 minutes. Bake for 10 minutes at 400 degrees or until golden brown.

Having Lunch At The Park

I left work at noon to find something to eat. I wasn't really sure what I was hungry for. I headed for a small grocery store in Hancock for some soup but I really wasn't hankerin' (is that a word?) for soup...so I passed by. Then I remembered another little cafe in the old hospital. What the heck.....I'll give it a try.


I ordered the Hot Oven Roasted Turkey Dijon. This is how it's described on the menu:


Fresh roasted turkey topped with sauteed mushrooms and onions, provolone cheese, a creamy Dijon sauce and served on an Italian Batard, with pickle & chips-$6.95.


Sounded good to me, so I ordered it. I wasn't sure what Italian Batard was but I love bread--any bread--so I wasn't too concerned.
The cafe is called Kangas' Cafe. They also do catering and I have been at several weddings where they have catered and I enjoyed their food. Today was no exception. This is the "to-go" box with their menu and the gentleman at the counter gave me the two candies. PERFECT!

I drove to a small park close to work to eat and noticed this little guy busy with his pine cone. I couldn't eat all the bread or all the chips so I shared with him.

He carried this pine cone all over the park. He'd run with it in his mouth, drop it, run away from it, then come back and get it. Funny!

I watched him for a bit and then had to head back to work.

Turkey in my belly......I'll need a nap break this afternoon. Hope I can hold out for the rest of the day!

New Found Snack

Yellow squash. Who da thunk this would become a favorite snack for me?

Thanks to my sister it is now a favorite snack. Oh, it'll never take the place of chocolate but it sure is a healthier snack. I was hanging out with my sister and she came up to me with this bowl of cooked squash. Ewwww! Her eating habits just don't appeal to me. I must have been going through chocolate withdrawal because she made it look good. Gave it a taste. Hmmm, not bad. Nuke me up some!! Tried it, liked it and have been snacking on it since.
So I guess I need to always try a new food rather than turn my nose up at it. Just yesterday I was at the bead store and the owner was talking about fresh asparagus and how I just had to try it.....steamed, with a little butter and salt. I thought back to my younger years when my Mom made us eat canned asparagus----so totally gross. Nope, don't want to try it. Peg said it is so much better than the canned---oh Erika, give it a try. Nope!!

So back to the always try before the no likey response comes around......went to Econo and picked up a bunch. I'll let you know.
